Meticulous Processing

Special attention is paid to all aspects of processing, with strict attention to food safety and temperature control. All Tanglewood Farms chickens are hand selected to standards higher than USDA Grade A, selecting only the top birds for our label. Tenderness is accomplished through a controlled aging process before deboning of the birds, and other proprietary processes, including shear testing to make sure that our product is consistently tender. Strictly limiting the time from farm to processing, and never deep chilling or partially freezing the birds during processing ensures a consistently moist product. A meticulously followed HACCP plan (Hazard Analysis Critical Control Points) that exceeds USDA requirements is in place from the hatchery to our distributors to ensure a consistently safe and wholesome product.
